Designed in Napa, California starting in 2017, Thomas Keller and Armando Manni have been crafting chocolate from the bean unlike any we have seen before. They developed a methodology to preserve the naturally occurring antioxidants in cocoa beans which in turn produces a delicious, complex chocolate that draws the full potential out of every bean.
